Beef Kebobs with Cauliflower Steaks
Juicy beef skewers paired with charred cauliflower steaks make for a hearty yet balanced meal. Bright lemon, smoky seasoning, crunchy pecans, and a sprinkle of feta bring bold flavor to this simple, protein-packed dish.

Ingredients:
1 portion beef tenderloin, cut into 1” cubes
1/8 tsp salt
1/2 tsp olive oil
1 lemon, zested and juiced, divided
1/2 bell pepper, deseeded and cut into 1” squares
Caulifl ower Steaks:
½ head caulifl ower, cut into 1” thick slices through thestem keeping the whole slice intact, set aside anyloose fl orets for another use
1/8 tsp salt
1 tsp onion powder
1/2 tsp olive oil
5 pecans, chopped (1/2 portion fat)
1 oz (28g) feta, toasted, crumbled (fat)
1 tbsp parsley, chopped (optional)

Method:
Toss beef cubes with salt, olive oil, lemon zest and half of the lemon juice. Set aside.
Toss cauliflower steaks carefully with salt, onion powder, olive oil and remaining lemon juice.
Optionally marinade beef and cauliflower for 1 hr.
Preheat air fryer to 400F. Place cauliflower steaks into air fryer cook for 10 minutes.
Meanwhile, skewer beef cubes and green pepper, alternating each. Place into air fryer beside cauliflower steaks. Flip cauliflower steak and cook for another 5 minutes or until charred. Continue cooking beef until internal temperature reaches 145F.
When ready to serve, top cauliflower steaks with pecans, crumbled feta and optional parsley
